Some of the future projects that I intend to work on in the next 12-18 months.
Malt Mill – Almost complete. With the help of Assistant Brewer, Thomas Jay, and Senior Assistant Brewmaster, Stephen Jay, I was able to complete 90% of the this project. I will post final details and specs when completed.
Experimental Beers – Wow, long list of stuff here. New concepts are chestnuts for a gluten free offering (I am getting sick of sorghum). Hop trials – split brew hop additions at knockout for some new and exciting hop varieties (Citra, Falconers Flight, etc). Maybe a new IPA called Fruit Salad. More sour beers. Yummy Yummy Sour (maybe a soured Irish Stout fermented on Weissen Yeast)
Brewhouse Upgrades – Lets see if I can move to all grain all the time by the end of 2011. Thats my goal.
Fermenting and finishing upgrades – My finished beers are starting to develop a house character that I need to address. Not that I mind as I have a nice house but as I try to make more experimental and exciting beers, it would be nice to know that it tastes exactly how I planned.
