Dry Hopping the IIPA…

I just moved the Double IPA to secondary tonight. All I can say is “Wow, its both juicy and bitter. Very bitter” I have to figure its close to 90 IBU from my perception of its bitterness. Its so yummy. I am drying hopping in on 2.0oz of Sorachi Ace to give it that extra hop aroma. It has a slight sulphury aroma from the yeast (which was expected). I figure it should be done in 2-3 weeks. I can’t wait.

Tasted the Pom and Raspberry Melomels and they are coming along. The Raspberry one is spectacular. The Pomegranate one is a little on the hot side for alcohol and has a slight cidery bitter character. I think its time to crash cool and let it rest. Raspberry one needs to move to secondary in the next week where I plan to add another couple pounds of raspberries.

The Brewery is in full swing in preparations for the Fall and Winter seasons.
